  • 2 tbsp tomato paste

  • 2 tbsp red palm oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp grated ginger

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1/2 tsp cayenne pepper (adjust to taste)

  • 1 cup vegetable broth

  • Salt, to taste

Instructions (Approx. 45 minutes):

  1. Cook quinoa in vegetable broth according to package instructions. (Estimated time: 15-20 minutes)

  2. Roast mushrooms, root vegetables, and greens with red palm oil, salt, and pepper. (Estimated time: 20-25 minutes)

  3. Prepare the Ghanaian-inspired sauce: Sauté onion, garlic, and ginger in red palm oil. Add tomato paste, spices, and vegetable broth. Simmer until thickened. (Estimated time: 10 minutes)

  4. Assemble bowls with cooked quinoa, roasted vegetables, and Ghanaian sauce.
